                                        The pomace of Primitivo, right from their arrival in the distillery, is treated and preserved with "GrappaSystem", a system thanks to which it is possible to give life to a controlled fermentation obtained with the addition of selected oenological yeasts. “GrappaSystem” also guarantees the preservation of the pomace in an ideal, healthy environment with the right pH level, inside food grade plastic film tunnels, at high pressure and in the absence of oxygen. This is the secret that allows the pomace to keep the aromas intact even for several weeks, in a completely natural way

                                        ORGANOLEPTIC CHARACTERISTICS

                                        The olfactory sensations are intense, recalling notes of wild berries, violets, licorice and a delicate herbaceous aroma. In the mouth it is vigorous, dry, unusual. Excellent distillate to conclude a sumptuous dinner. To fully appreciate its aromas, we recommend tasting it in medium-sized tulip-shaped glasses

                                        DISTILLATION

                                        The pomace is distilled in discontinuous copper plants in a bain-marie. This system consists in heating the water in a cavity which in turn heats the pomace present in the still. This distillation procedure favorably affects the quality of the aroma under the control of master distillers who thus determine the extrapolation of the typical aromatic characteristics of the vine. The final result is vigorous, with a strong personality, so much so that this distillate is defined as an "artisan conception"

                                          Intriguing and refined grappa, characterized by intense notes of red grapes with slightly peppery hints, in harmony with the aromas of vanilla, cocoa and aromatic wood. On the palate it is robust but balanced, with a great impact. Selvarossa is best expressed served in the Bolla glass at 18-20° C, to be tasted slowly to appreciate the long aromatic evolution in the glass

                                          DISTILLATION

                                          It takes place partly in traditional bain-marie stills and partly in technologically advanced systems in order to obtain the maximum aromatic yield and maximum finesse on the palate, each vine that participates in the blend is distilled separately and only at the time of preparation of the blend for the During aging, the grappas obtained are expertly dosed, to form a harmony in which none prevails but each one gives its best
