Pale pink and shining color. On the nose small crispy red fruits dominance, then delicate notes of rose, surrounded by iodized blows. Pleasantly fresh and savory, balanced sip, typical expression of the Negroamaro it represents. TASTING NOTES: A deep ruby red colour with intense violet highlights. The bouquet is characterized by the balance of each of the elements being both elegant and soft. In the mouth it has excellent weight with soft and rich tannins and a finish redolent of vanilla and chocolate.

A bright straw lemon color wine. It reveals hints of yellow fruit, peach and plum, delicate floral touches and pleasant minerality. The sip surprises with its freshness and satisfying flavor. Final good persistence in the mouth

The pomace of Primitivo, right from their arrival in the distillery, is treated and preserved with "GrappaSystem", a system thanks to which it is possible to give life to a controlled fermentation obtained with the addition of selected oenological yeasts. “GrappaSystem” also guarantees the preservation of the pomace in an ideal, healthy environment with the right pH level, inside food grade plastic film tunnels, at high pressure and in the absence of oxygen. This is the secret that allows the pomace to keep the aromas intact even for several weeks, in a completely natural way
ORGANOLEPTIC CHARACTERISTICS
The olfactory sensations are intense, recalling notes of wild berries, violets, licorice and a delicate herbaceous aroma. In the mouth it is vigorous, dry, unusual. Excellent distillate to conclude a sumptuous dinner. To fully appreciate its aromas, we recommend tasting it in medium-sized tulip-shaped glasses
DISTILLATION
The pomace is distilled in discontinuous copper plants in a bain-marie. This system consists in heating the water in a cavity which in turn heats the pomace present in the still. This distillation procedure favorably affects the quality of the aroma under the control of master distillers who thus determine the extrapolation of the typical aromatic characteristics of the vine. The final result is vigorous, with a strong personality, so much so that this distillate is defined as an "artisan conception"

ORGANOLEPTIC CHARACTERISTICS
Intriguing and refined grappa, characterized by intense notes of red grapes with slightly peppery hints, in harmony with the aromas of vanilla, cocoa and aromatic wood. On the palate it is robust but balanced, with a great impact. Selvarossa is best expressed served in the Bolla glass at 18-20° C, to be tasted slowly to appreciate the long aromatic evolution in the glass
DISTILLATION
It takes place partly in traditional bain-marie stills and partly in technologically advanced systems in order to obtain the maximum aromatic yield and maximum finesse on the palate, each vine that participates in the blend is distilled separately and only at the time of preparation of the blend for the During aging, the grappas obtained are expertly dosed, to form a harmony in which none prevails but each one gives its best

TASTING NOTES: The colour is an intense ruby with scarlet highlights ; the bouquet has enticing notes of cherry jam , dates , vanilla and liquorice. On the palate red berry fruits dominate with undertones of toasty oak; the finish is warm and spicy with well-integrated tannins. Perfect as a wine of meditation.....and of conversation !
Selvarossa TERRA Salice Salentino Riserva DOP 2011
TASTING NOTES: The wine has an intense garnet red colour with a full bouquet of red fruits in particular ripe cherries with hints of vanilla and the special Negroamaro spiciness. On the palate it is beautifully soft with an intensity of flavour and soft tannins. Wonderfully fresh (thanks to the careful work in the cellar) it has a long and satisfying finish. Perfect as a wine of mediation… or of conversation!
SERRE Susumaniello Salento IGP
TASTING NOTES: A deep ruby red in colour with blue depths; on the nose the red fruits dominate with jam and notes of graphite pencil to finish. On the palate it shows a splendid balance between ripe fruit and minerality. An excellent long finish.
It should also be mentioned that Susumaniello grapes are particularly rich in anthocyanins which being anti-oxidants have numerous health benefits.

Hand harvesting to preserve quality and prevent crushing.
PRODUCTIVE PROCESS
A rosé inspired by the classic styles of Salento, reinterpreted with technique and vision. Hyperoxygenation enhances its intense, sensual colour, diverging from traditional cherry hues and introducing a new stylistic elegance. Fining agents such as charcoal and PVPP are deliberately avoided. Flotation replaces static settling to ensure greater sustainability. Fermentation is carried out with air pump-overs to enhance both aroma and structure. The wine is then aged in bottle.
ORGANOLEPTIC CHARACTERISTICS
The wine displays an intense, bright, and alluring colour with purplish reflections. On the nose, aromas of small red berries emerge, accompanied by notes of cherry and nectarine, with captivating hints of fresh flowers. On the palate, it is juicy, generous, and vibrantly citrus-driven, with a long, flavourful finish that leaves a pleasant saline trail.

Ideal when paired with light dishes, appetizers, fish-based preparations, and salads.

ORGANOLEPTIC CHARACTERISTICS
The wine presents a ruby colour enhanced by elegant purple veins. On the nose, notes of plum and date emerge, uplifted by a hint of blood orange and complemented by delicate nuances of bay leaf and violet. On the palate, it exhibits great tension, offering freshness and a rich texture where the fruit’s fullness harmoniously blends with a savoury finish reminiscent of licorice.
FOOD PAIRING
Ideal when paired with red meats, roasts, Mediterranean dishes, and aged cheeses.
