PRODUCTIVE PROCESS
The grapes are harvested by hand and placed on racks where they are subjected to drying for about 2/3 weeks. Soft pressing and temperature- controlled fermentation at 15° C in stainless steel vats follows
AGING PROCESS
Brief passage in French oak barriques, then bottle
ORGANOLEPTIC CHARACTERISTICS
An elegant Passito wine made from Fiano grapes with a shining golden yellow color. Bursting aromas of candied fruit and jam, pear, notes of acacia honey and saffron, with an almond finish. The sip is enveloping, soft, sweet but well balanced with a pleasant freshness, which never makes it cloying. Long and tasty persistence

Small bakery; Almond paste; apricot tarts; shortbread with dried and candied fruit; but also aged and blue cheeses; Foie gras

HISTORICAL AND TECHNICAL NOTES
"Selvaoro" expresses all the warmth of our land: Salento. The Fiano grapes are harvested manually in boxes around last ten days of August and then left to dry slowly on the racks. After 2 years of aging in small casks, our Passito is ready to be bottled.
