HISTORICAL AND TECHNICAL NOTES
The story of Primitivo IGP is lost in the mists of time; it was probably brought to Puglia by the Ilyrians from their native Balkans who were dedicated to the production of vines and then traded around the Mediterranean by the Phoenicians. Today Primitivo, along with the Negroamaro represents the most famous and most sought after of the wines of Salento; synonymous with quality and tradition along with the traditional method of vine training, the Alberello Pugliese bush vines. This system gives a very low yield per Hectare but also produces grapes of very good quality.
The harvest is early and done by hand, the grapes are then macerated in horizontal rotating vats before the wine is aged in french oak barriques for 6 months and then finally matured in bottle.
