HISTORICAL AND TECHNICAL NOTES

Our Fiano grapes come from the Bagnara parish situated in the limestone country between Cellino San Marco and Campi Salentina along the old border line known as the “Limite dei Greci” marking the limit of the Greek colonies in Puglia. A uniquely hilly area within Salento where the breezes blow through acres of woods, Olive groves, Figs, stone walls, the Mediterranean Maquis and the extraordinary vineyards; where the winds carry the scents of the Adriatic and often the heat from the African deserts.

The grapes are picked in August; coldmacerated at 4°C for 24 hours before a cool vinification. The resultant wine was once described as the “Gold of Salento” and known to both Frederick II and Charles of Anjou in the 13th Century.
